English Pea Salad

Ingredients

  • 1 1/2 pound fresh English peas (1 1/2 cups shelled)
  • 1 cup (4 ounces) sharp Cheddar cheese, cut into cubes
  • 1/2 cup chopped onion
  • 2 hard-cooked eggs, chopped
  • 1 (4-ounce) jar diced pimiento, drained
  • 6 small gherkins, chopped
  • 3 tablespoon mayonaise
  • 1/4 teaspoon prepared mustard
  • 1/8 teaspoon pepper
  • tomato slices

Instructions

Shell and wash peas; cover with water in a medium saucepan. Bring to a boil; cover, reduce heat, and simmer 8 to 12 minutes or until tender. Drain. Combine peas and next 8 ingredients; mix well. Chill. Serve with tomato slices. Yield: 6 servings.
