Easy Simple Summer Blueberry Watermelon Salad
Blueberries, lemons and watermelon scream summertime. I love them so much I have a both a blueberry brush and a lemon tree. I keep them outside in the summer and my sunroom in the winter. They smell amazing and remind me of so many fantastic family fun times picking fresh summer fruit. Growing up we ate a lot of watermelons. My parents are deceased, but I have special memories outside in our backyard eating and spitting watermelon seeds. It was a lot of fun for a kid. Three of my children were born in the hot summer of August. Toward the end of the pregnancy especially with my twins, all I ate was watermelon. Creating and eating this salad brings back a fluid of memories. It is super simple to make and delicious. For a dessert using this salad, top a piece of pound cake or Angel food cake for a quick and easy light dessert.

Ingredients
- 1/4 cup sugar
- 1/4 cup water
- 1 fresh lemon
- 2 cup blueberries
- 3 cup Watermelon, in balls or diced
- 8 mint leaves, chopped
- 1/4 teaspoon salt

Simmer sugar and water for a couple of minutes on the stove until completely dissolved. The sugar will turn clear when dissolved. It only takes a couple of minutes. Allow this simple sugar mixture to completely cool.

Add 2 cups Blueberries to a large bowl.

Use a melon baller and make 3 cups Watermelon balls.

Combine the watermelon balls with the blueberries.

Add juice and zest of one lemon, salt, and mint leaves.
