Frog Eyed Salad
Ingredients
- 1 cup Acini DiPepe or Acini Pepe 44 (a macaroni/pasta product)
- 1 cup sugar
- 2 tablespoon flour
- 3 beaten egg yolks
- 1 1/3 cup juice from canned fruit
- 13 ounce can drained pineapple tidbits or more
- 3 small cans drained mandarin oranges
- 1 small can crushed pinapple
- 13 ounce cool whip or more
- small can drained grapefruit sections, optional
- flaked coconut, optional
- miniature marshmallows, optional
- chopped nuts, optional
Instructions
Cook pasta according to package instructions. Combine sugar, flour, egg yolks and fruit juice. Cook sauce until thick. Cool sauce and stir in macaroni/pasta. Refrigerate overnight. The next day stir in pineapple tidbits, oranges, crushed pineapple and coolwhip.
