Garlic Croutons
Ingredients
- 3 tablespoons unsalted butter
- 3 tablespoons mild olive oil
- 3 cups stale bread cubes (1/2 inch cube)
- 2 large cloves garlic, minced
- 1 teaspoon mixed salad herbs (parsley, chives, tarragon, and chervil
- 3 tablespoons grated Parmesan Cheese
Instructions
Heat the butter and oil in a large non stick skillet over medium-high heat. Add the bread cubes and cook, tossing constantly with a wooden spoon for 3 to 4 minutes. Reduce heat to medium low. Add the garlic and salad herbs. Continue to cook the croutons, tossing frequently, until golden brown, 20 to 25 minutes. Remove to a bowl and toss with the Parmesan. Store in an airtight container until ready to use. Makes 3 cups.
