Ginger Melon Salad Recipe
"This ginger melon salad recipe is great as a starter or just as a salad to accompany your meal. It’s refreshing and delicious. Ingredients
- 2 large handfuls of salad leaves (or spinach)
- 1/2 small melon, cut into small chunks
- 1/2 small cucumber, peeled and cut into small chunks
- 1 Tablespoon fresh ginger, grated or diced into small pieces
- 2 teaspoons fresh lemon juice
- 2 Tablespoons extra virgin olive oil
- 1/2 teaspoon sea salt (or to taste)
