    Green Pea Salad

    Ingredients

    • 32 ounces green peas, rinsed and drained
    • 1 cup Cheddar cheese, 4 ounces, finely diced
    • 1 cup celery, diced
    • 1/2 cup sweet pickles, thinly sliced
    • 1/2 cup red bell pepper or pimento diced
    • 1/2 cup mayonnaise
    • salt
    • freshly ground black pepper to taste

    Instructions

    Yield: 8 Servings. Combine peas, cheese, celery, pickles, bell pepper, mayonnaise, salt and pepper in medium-size bowl. Toss lightly to coat evenly. Cover and refrigerate at least 2 hours.
