I was developing this recipe the same weekend I was planting my garden so I had fresh tomatoes, cucumbers, and herbs on the brain so I knew I wanted to come up with a side dish that could be my go-to once the garden started producing. Cucumbers are so versatile- I love them with Asian flavor combinations as well, but Mediterranean is my usual go-to.
