Thank you so much for the free recipe because it is truly a wonderful way of eating vegetables! In our home we all love veg (perhaps because mostly they are fresh from the garden) so I am always on the lookout for new and interesting ways of using them in our diet. We marinated ours overnight and served them as a side dish at a barbecue we had over the weekend. They were a huge hit and I happily recommend to anyone to try.

My Mother used to make a salad very similar to this when I was young, and I believe it is the reason I love vegetables so much. She would make it the day before and serve it as a main course for dinner on those warm Summer nights. This recipe is as close to hers as I have ever found. It is bountiful, and refreshing. This recipe is so much more fun than your standard crudit or veggies and dip platter at a party. The line will move much quicker, since everyone can just grab a bowl and go mingle! The simple natural marinade for the veggies doubles as a healthy homemade salad dressing as well. I might not do the mushrooms overnight, since they might discolor, but just wait until an hour before serving to toss them in.
