Pear and Goat Cheese Salad with Toasted Almonds
This out-of-this-world Pear and Goat Cheese Salad with Toasted Almonds recipe is the perfect combination of textures and flavors. With sweet pears, crunchy almonds and smooth goat cheese, this is a great spring salad recipe. Adding a little brown sugar to those roasted pears will make this dish even sweeter than it already is.
Ingredients
- Greens
- Almonds
- Bosc pears
- Goat cheese
- Olive oil
- Balsamic vinegar
- Pinch of sugar
Instructions

Preheat oven to 400 degrees F.

Cut or tear up your greens.

Chop up two of your pears (save the third for later!). These pears are going to be put in the salad raw.

Put sliced raw almonds in a baking dish and put them in preheated oven.

Cook for 5 minutes, shake the pan/turn the almonds over, then cook for another 5 minutes. You’ll start to smell that wonderful nutty aroma and you’ll know they are done.

While your almonds are toasting cut or crumble your goat cheese.

Take your third pear and cut it into long slices.

Place your sliced pears into a pan and sprinkle a little brown sugar on top.

Cook over medium heat for about 8-10 minutes turning the pears halfway through.

For dressing: Add equal parts olive oil and balsamic vinegar to your bottle and then a pinch of regular table sugar. Then, whisk or shake the ingredients together.

Assemble your salad. Mix the raw pears and most of the goat cheese in with the lettuce and the warm pears on top with a garnish of goat cheese. Sprinkle on your toasted almonds.
