Spinach Salad with Pistachios and Sun Dried Tomatoes
"A few weeks ago, we were at one of our favorite places on Earth…Port Aventura, in Tarragona Spain. We decided to go Ferrari Land for the day, which is a connecting park. Since I am so special needs, and do not dare eat the fast food places, ( burgers, fries, and other various junk food), we went to the pretty Italian sit down restaurant. I normally have to order the same ol’ boring things when I go out to any restaurant…aka…plain green salad, grilled veggies, or a crap ton of side dishes. Well, this place actually had a Vegan salad. That’s right, I said it folks… VEGAN. No cream based dressing, cheeses, meats, etc… and it was actually so freakin’ amazing, that I decided to duplicate it at home. To have decent food at a theme park is unheard of, but to have great vegan food? Get right out of town. Here is my ode to the Spinach Salad with Pistachios and Sun Dried Tomatoes straight outta Ferrari Land."
