Avocado corn Salsa
Ingredients
- 2 cup white corn, drained
- 3 large avocados, chopped
- 1/4 cup green chiles, roasted and diced
- 1 jalapeno, diced
- 1/4 cup white onions, chopped
- 1/2 plum tomato, seeded and diced
- 1 tablespoon fresh cilantro, chopped
- 1/2 teaspoon crushed red pepper
- 1 clove garlic, minced
- pinch oregano
- pinch black pepper
- pinch celery salt
- salt, to taste
- lime juice, a squeeze
Instructions
Gently fold all ingredients except salt and lime together in a mixing bowl. Salt to taste and top with lime juice. Let stand at room temperature for 1/2 hour before serving. Makes 4 cups
