Cheesy Roast Beef Sliders
Cheesy Roast Beef Sliders are the perfect recipe for a crowd. You can easily make a large batch of these sliders for a party or holiday potluck and bet that everyone will be thoroughly satisfied. Made with melted Brie, these sliders are as elegant as they are delicious. They are also super easy to make! All you need are a few ingredients and about a half hour from start to finish. If you're familiar with funeral sandwiches, this recipe is very similar. We've substituted roast beef in place of ham, and Brie in place of Swiss, but other than that, the basic recipe is the same. These sliders are the perfect thing to make for a potluck and are sure to delight!
Ingredients
- 1 package King's Hawaiian rolls
- 1/4 pound deli sliced roast beef
- 5 ounce Brie cheese, sliced thin
- 1 teaspoon oil
- 1 tablespoon butter
- 1/2 medium yellow onion, sliced thin
- 1/4 cup mayonnaise
- 2 tablespoon prepared horseradish
- salt and pepper
- 3 tablespoon butter, melted
- poppyseeds (optional)

Instructions

In a small frypan, melt butter and olive oil over medium heat. Add onions to the pan. Season with salt and pepper. Sauté until soft and caramelized. Remove from the heat and set aside.

Preheat oven to 350 degrees F.

Slice rolls and remove tops.

In a small bowl, combine the mayonnaise and the horseradish.

Spread bottom of rolls with half the mayonnaise mixture.

Top with caramelized onion, roast beef, brie cheese.

Spread tops of rolls with remaining mayonnaise mixture.

Place tops on the sandwiches. Drizzle tops with melted butter and sprinkle with poppy seeds (if desired).

Bake in the oven for 5-8 minutes, or until the cheese is melted and the tops just begin to turn golden brown.
