Chicken Salad Melt Sandwich

"When it came time to make lunch, for some odd reason my mind went back to lunch time at the restaurant I worked at when I lived in Pennsylvania. One of our most popular lunchtime sandwiches was a Tuna Melt. Why I was thinking tuna salad instead of chicken salad is beyond me. But then I started thinking… why can’t I switch the tuna salad for chicken salad and make a Chicken Salad Melt Sandwich? I couldn’t think of a good reason why I couldn’t, so I did it. It was absolutely delicious and my husband loved it! So now the question is…why couldn’t I do it with ham salad? Melted cheese, ham salad…that’s another lunchtime creation waiting to happen.
