Copycat Chick-fil-A Chicken Sandwiches

Ingredients
- 2 whole chicken breasts, skinned, boned, and halved
- Kosher salt and pepper to taste
- 2 tablespoon vegetable oil, for frying
- 3/4 teaspoon paprika
- 1/4 teaspoon cayenne pepper
- 1 egg
- 3/4 cup all-purpose flour
- 1/4 cup whole wheat flour
- 1 tablespoon powdered sugar
- 1/4 teaspoon baking soda
- 1/4 cup milk
- 1/4 teaspoon dry mustard
- pickles, to taste
- butter, to taste
- soft hamburger buns
Instructions

Cut the chicken breasts in half horizontally to make 4 thin pieces. Put chicken in between heavy plastic and pound with a mallet to flatten.

After pounding, season the chicken with Kosher salt, black pepper, paprika and cayenne pepper.

In a small bowl whisk together egg, milk and 2 tablespoons of water.

In a separate bowl combine and mix the flours, the baking soda, dry mustard. I like to add a pinch more of cayenne pepper and oregano.

Heat about 2 tablespoons of vegetable oil in cast iron skillet and wait for it to get hot (325 degrees F.)

Dip the chicken in egg mixture and then dip in to flour mixture. Make sure to fully coat each chicken. Fry the chicken in the oil until it is golden brown, about 4 to 5 minutes. Drain on paper towels.
- Butter and toast buns, serve with a pickle on the sandwich.
