Seafood Salad Sandwiches
Ingredients
- 1 1/2 cup chopped cooked seafood (shrimp, lobster, crabmeat)
- 1/2 cup mayonnaise or salad dressing
- 1 medium stalk celery, chopped about 1/2 c.
- 1/4 cup sliced green onions
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 4 french rolls or frankfurter buns, split
Instructions
Mix all ingredients except rolls. Fill rolls with seafood mixture. Makes 4 servings. Substitutions. Beef Salad FIlling; Substitute 1 1/2 cups chopped cooked beef for the seafood. Stir in 2 tbsps. sweet pickle relish, drained. Chicken Salad Filling; Substitute 1 1/2 cups chopped, cooked chicken or turkey for the seafood. Egg Salad Filling; Substitute 6 hard-cooked eggs, peeled and chopped, for the seafood. Ham Salad Filling; Substitute 1 1/2 cups chopped fully cooked smoked ham for seafood. Omit salt and pepper. Stir in 1 tsp. prepared mustard. Tuna Salad Filling; Substitute 1 can tuna, drained, for the seafood. Stir in 1 tsp. lemon juice.
