Spinach Artichoke Grilled Cheese

"I made a grave mistake recently. It was a completely unacceptable mistake, and it had to get corrected immediately. I made a batch of spinach artichoke dip…without confirming that we had enough tortilla chips in the house. Turns out we were down to the last few tortilla chips. Oh boy. How is one supposed to enjoy spinach artichoke dip without tortilla chips!? This Spinach Artichoke Grilled Cheese is what happens when you run out of tortilla chips. I think I stumbled onto a favorite new idea for grilled cheese sandwiches!We do like dipping carrot sticks in spinach artichoke dip, but we were all out of carrots, too. I failed at the advance planning here, folks. But then I looked over and saw some leftover Texas toast from that morning’s french toast. Hmm. Texas toast. I had butter in the fridge, and I had some extra cheese as well. Spinach Artichoke Grilled Cheese! Laura looked at me like I had a screw loose, but I convinced her to give it a shot…and these grilled cheeses were delicious!"
