The Hot Brown
Ingredients
- 1/3 cup margarine or butter
- 3 Tbsp. all-purpose flour
- 1/8 teaspoon black pepper
- 2-1/3 cups milk
- 2 slightly beaten egg yolks
- 1/3 cup grated Parmesan cheese
- 8 slices white bread, toasted
- 12 oz.s thinly sliced, fully cooked turkey
- 2 Tbsp. grated Parmesan cheese
- 16 strips fully cooked bacon
Instructions
For sauce, melt margarine or butter in a medium saucepan. Stir in flour and black pepper. Add milk all at once. Cook and stir till thickened and bubbly. Gradually stir _some_ of the hot mixture in the beaten egg yolks. Return all of the mixture to the saucepan; cook and stir just till bubbly. Remove from the heat. Stir in the 1/3 cup of Parmesan cheese. Arrange the slices of toast in a single layer on the unheated rack of a broiler pan. Top with sliced turkey, sauce and the 2 Tbsp. of Parmesan cheese. Broil 3 to 4 inches from heat for about 3 minutes or till the sauce is brown and bubbly. For each serving, place one toast stack on serving plate. Top each serving with 2 slices of cooked bacon, forming an "X". Serves 8.
