Samba Dog Relish

Ingredients

• 1 large hard boiled egg, peeled and cut into 1/4 inch dice
• 1 fresh, ripe medium tomato, seeded and finely chopped
• 1/4 cup corn kernels, freshly cooked or drained canned
• 1/4 cup cooked fresh or frozen green peas or drained canned
• 1/4 cup pimiento-stuffed green olives, cut into 1/4 inch dice
• 1/4 cup pitted black olives, cut into 1/4 inch dice
• 1/4 cup diced red onion
• 3 tablespoon extra-virgin olive oil
• 1 1/2 tablespoon red wine vinegar, or more to taste
• salt and freshly ground black pepper to taste
