Baja Quiche

Ingredients

  • 6 corn tortillas
  • 8 ounce Monterey Jack cheese shredded
  • 8 ounce can refried beans
  • 1/2 pound chorizo or hot Italian sausage
  • 2 tablespoon diced Ortega chilies
  • 2 eggs
  • 2 cup half and half
  • 1/2 teaspoon salt

Instructions

Cook and drain sausage. Line a 9-inch pie pan with tortillas, extending about 1/2" over pan edge. sprinkle half the cheese over tortillas. Layer beans, sausage, and chilies. Beat eggs; stir in half and half and salt. Pour over quiche; top with remaining cheese. Bake at 325F for 30-40 minutes, or until set. Serve warm. Garnish with sliced tomato, avocado and cilantro sprigs.
