Ham and Spinach Quiche

Ingredients

  • 2 tablespoon finely chopped shallots
  • 2 tablespoon butter
  • 1 1/4 cup chopped blanched spinach or 1 pkg frozen chopped spinach, thawed
  • and squeezed dry
  • 3 eggs
  • 1 1/2 cup whipping cream
  • 8 oz. ham, minced coarsely
  • 1/2 cup grated Swiss or Gruyere cheese
  • 1 tablespoon butter to dot top of quiche
  • salt
  • pepper to taste
  • dash nutmeg

Instructions

Saute shallots in butter. Add spinach and stir over moderate heat for several minutes to evaporate all water. Stir in salt, pepper and nutmeg. Taste for seasonings. Adjust. In a large bowl, beat the eggs, cream, a dash of salt and pepper. Add spinach and ham to mixture. Stir well. Pour into pastry shell, sprinkle with cheese, dot with butter and bake for 25 to 30 minutes at 375 degrees F.
