Impossibly Easy Potato Pot Pie

Ingredients
- 8 ounces mushrooms, sliced
- 1 1/2 cup Miracle Whip or mayo
- 2 tablespoons Miracle Whip or mayo
- 2 cups cooked chicken or turkey, chopped
- 10 ounces frozen mixed vegetables, thawed and drained
- 1/4 cup onion, chopped
- 1/4 cup flour
- 1 1/4 cup milk
- 1 teaspoon basil
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1 1/2 cup Cheddar cheese, shredded
- 2 cups mashed potatoes
Instructions
- Cook mushrooms and onions in 2 tablespoons of mayo over medium-high heat.
- Add flour and seasonings. Gradually add milk, stirring until thickened.
- Stir in 1 cup mayo, turkey, vegetables, and 1 cup cheese. Cook 5 minutes.
- Spoon mixture into 1 1/2 quart casserole. Stir 1/2 cup mayo into potatoes. Top casserole with potato mixture.
- Broil until golden. Sprinkle with remaining cheese; broil until cheese begins to melt.
