Impossibly Easy Potato Pot Pie

If you're looking for a new way to enjoy mashed potatoes, try this Impossibly Easy Potato Pot Pie. Your family will love this homemade pot pie recipe, chock full of meat, veggies, Cheddar cheese, and of course, potatoes!

Ingredients

  • 8 ounce mushrooms, sliced
  • 1 1/2 cup Miracle Whip or mayo
  • 2 tablespoon Miracle Whip or mayo
  • 2 cup cooked chicken or turkey, chopped
  • 10 ounce frozen mixed vegetables, thawed and drained
  • 1/4 cup onion, chopped
  • 1/4 cup flour
  • 1 1/4 cup milk
  • 1 teaspoon basil
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 1/2 cup Cheddar cheese, shredded
  • 2 cup mashed potatoes

Instructions

  1. Cook mushrooms and onions in 2 tablespoons of mayo over medium-high heat.
     
  2. Add flour and seasonings. Gradually add milk, stirring until thickened.
     
  3. Stir in 1 cup mayo, turkey, vegetables, and 1 cup cheese. Cook 5 minutes.
     
  4. Spoon mixture into 1 1/2 quart casserole. Stir 1/2 cup mayo into potatoes. Top casserole with potato mixture.
     
  5. Broil until golden. Sprinkle with remaining cheese; broil until cheese begins to melt.
