Ingredients
- 1 (22-ounce) package frozen mashed potatoes or homemade
- 1 pound ground beef
- 1 onion, chopped
- 1/2 cup frozen sliced carrot, thawed (optional)
- 2 tablespoons flour
- 2 teaspoons salt
- 1/2 teaspoon pepper
- 1 cup beef broth
- 1 large egg, slightly beaten
- 1/2 cup shredded cheese
Instructions

Preheat oven to 350 degrees F.

Cook potatoes according to package directions. Set aside.

Cook beef with onion in large skillet for 5 to 6 minutes, stirring until beef crumbles and is no longer pink. Drain and return to skillet.

Add carrots (or any other vegetables).

Stir in flour, 1 tsp. salt, and pepper.

Add beef broth and cook, stirring constantly, 3 minutes or until slightly thickened.

Spoon mixture into lightly greased 11" x 7" baking dish.

Stir together potatoes, egg, and remaining salt and some pepper.

Spoon over beef.

Bake for 25 minutes.
- Sprinkle with cheese and bake another 5 minutes.
