Samosa Pie
Ingredients
- 1 med head cauliflower, broken into small florets
- 2 large potatoes, diced and parboiled (I leave the skin on)
- 1 cup thawed peas
- 3/4 cup raisins (I prefer golden, plumped up in pre-soak)
- 1/2 cup coarsely chopped roasted peanuts (optional)
- 2 green chilies crushed with 1 inch piece of ginger
- 1 tsp powdered cumin (roasted cumin gives a great flavor)
- 1 tsp garam masala
- 1/2 cup roasted peanuts, coarsely crushed
- 1/4 tsp cayenne pepper (optional)
- 1/2 tsp turmeric
- a little oil
- 2 Tbsp chopped fresh cilantro
- salt to taste
Instructions
Heat oil. Add turmeric, crushed green chili-ginger and stir fry 1 min. Add cauliflower, po. tatoes, spices, salt and stir again. Leave covered on low-med heat for about 7 mins or semi-doneness. Turn off heat. Add raisins, peas, cilantro, peanuts. Mix well. Leave covered on stove warmth till cool. Prepare pie crust shells. Add cooled samosa stuffing. Slash top crust a few times. Bake as given earlier.
