    Sicilian Fish Pie

    Ingredients

    • 12 ounces rich shortcrust pastry
    • 2 Tbsp caster sugar
    • 1/2 tsp grated lemon rind
    • 12 ounces white fish steaks
    • 1 large stalk of celery
    • 3 ounces stoned green olives
    • 1 large onion
    • 3 Tbsp olive oil
    • 1 Tbsp drained capers
    • 2 Tbsp tomato puree
    • salt and pepper
    • 3 courgettes
    • 1 egg
    • 3 Tbsp plain flour
    • oil for deep frying
    • 1 egg yolk

    Instructions

    Serves 8. Make pastry, adding sugar and lemon rind with 3 egg yolks Cube fish, chop celery, slice olives Peel and slice onion Heat oil in a saucepan, add onion and fry till golden Add celery, olives, capers, tomato puree, fish, 1/4 pint water and seasoning Simmer for 15 minutes Preheat oven 450 F Cut courgettes into thin fingers Beat egg, season flour Dip courgettes into egg, then into flour Deep fry till golden. Drain Divide dough into thirds Roll out one and use to line a greased and floured 8 inch springform tin Roll out remaining dough to two 8 inch rounds Layer fish mixture, courgettes and dough rounds in tin Brush with beaten egg yolk and bake for 50 minutes Remove from tin and serve hot.
