Spaghetti Pie

Ingredients

  • 1/2 pound cooked spaghetti drained
  • 2 tb olive oil or melted butter
  • 2 lg eggs, well beaten
  • 1/2 c plus 2 tb grated parmesan cheese
  • 1 c ricotta cheese
  • 1/2 c shredded mozzeralla
  • 1 c spaghetti sauce

Instructions

Preheat oven to 350 F. Toss hot spaghetti with olive oil in large bowl. In small bowl combine eggs and 1/2 cup parmesan cheese. Stir into spaghetti. Pour spaghetti mixture into lightly greased 10" pie plate and form into a "crust". Spread the ricotta evenly over the crust but not quite to the edge, and top with sauce. Bake uncovered 25 mins. Top with mozzeralla and bake 5 mins longer or until cheese melts. Remove from oven and sprinkle with remaining parmesan. Let cool 10 mins before cutting into wedges.
