Spring Quiche
The weather is getting warmer and the time for vegetables and fresh air is coming. Bring in Spring with this fantastic quiche recipe. With fresh vegetables, herbs, and bacon, it will become your favorite.
Ingredients
- 2 medium onions, white or yellow, chopped
- 8 ounces mushrooms, washed and sliced
- 10 ounces frozen spinach chopped, thawed and drained
- 2 or more cloves garlic, minced
- 3 eggs beaten with 1/4 cup milk
- 1 cup Mozzarella cheese, grated
- 1 cup Cheddar cheese, shredded
- 1/2 teaspoon basil
- salt and pepper, to taste
- 1 (9-inch) deep pie crust
Instructions
- Preheat oven to 350 degrees F.
- In a skillet melt 1-2 tablespoons of butter. Over medium heat saute onions and add garlic. When onions are translucent add the mushrooms and cook out the juice. Then add the chopped spinach and mix together. Salt and pepper added.
- Place the pie crust on a cookie sheet or something similar. Transfer vegetable mixture to the pie crust and spread evenly. Sprinkle the mozzarella cheese on top, then sprinkle on the cheddar cheese.
- Separately, gently beat the eggs adding the milk. Salt and pepper can be added to the eggs, add the basil. Slowly pour the egg mixture over the cheese and veggies.
- OBake for 1 hour or until it's no longer wet inside. Place pan in the lower part of the oven for the first 3 minutes and then transfer to the upper half to finish baking.

@Scorpio Lady - The 9" deep pie crust listed in the ingredients is for a pre-prepared pie crust that would come in a foil pan. If you are making your own pie crust from scratch, you would make this in a pie pan and then place that on top of the cookie sheet. I hope this helps! -Editors of RecipeLion

Really! Do I bake the Quoch ON a cookie sheet or do I bake it in a 9" deep pie pan that is placed ON a cookie sheet. Please explain.
