Three Cheese Biscuits

- 2 1/4 cup biscuit baking mix
- 1/2 cup milk
- 1/4 cup Cheddar cheese, shredded
- 1/4 cup Monterrey Jack cheese, shredded
- 1 tablespoon butter or margarine, melted
- Parmesan cheese, grated

Preheat oven to 400 degrees F.

Mix the baking mix, milk, and cheeses until a stiff dough forms. Turn the dough onto a surface well dusted with baking mix and gently roll in the mix to coat.

Shape the dough into a ball and knead 10 times. Roll out 1/2 inch thick. Cut with a 2-inch biscuit cutter dipped in baking mix.

Place on a greased baking sheet. Brush the tops with the melted butter or margarine and sprinkle with the Parmesan cheese.
- Bake 8 to 10 minutes or until golden brown. Serve warm.
