Dijon Shrimp Scampi
Ingredients
- 1 pound large shrimp, shelled and deveined
- 1 clove garlic, minced
- 2 tablespoons butter or margarine
- 1/3 cup Dijon mustard
- 1/4 cup lemon juice
- 1/4 cup fresh parsley
- hot cooked rice, optional
Instructions
In large skillet, over medium-high heat, cook and stir the shrimp and garlic in the margarine just until pink. Blend in the mustard, lemon juice, and parsley. Heat through. Serve over rice if desired.
