Imitation Crabmeat au Gratin
Ingredients
- 1 cup chopped onion
- 1/2 cup chopped bell pepper
- 1/4 pound margarine
- 1/4 cup flour
- 13 ounces can evaporated milk
- 2 egg yolks
- 1 pound imitation crabmeat
- 1/2 pound shredded cheddar cheese
- 1 tsp cajun spice seasoning or to taste
Instructions
Saute onion and bell pepper in margarine. Blend in flour to onion mixture. Stir milk in gradually. Add egg yolks, stirring until mixed well. Add cajun spice and cook five minutes. Tear up crabmeat until it is bite sized pieces and layer across bottom of a greased casserole (at least 2 quarts), although I tend to use an oval shaped casserole dish. Pour cooked sauce over crabmeat and sprinkle cheese on top. Bake at 375 degrees for 10-15 minutes. Serve over rice or fettucine noodles, if preferred.
