Lemon basted Scallops
Ingredients
- 4 tbls butter, melted
- 2 tbls lemon juice
- 1 clove garlic, crushed
- 1/2 tsp Worcestershire sauce
- 1/2 tsp salt
- 1/4 tsp tarragon
- 1/4 tsp basil
- 16 ounces package frozen scallops
- 4 ounces jar whole pimientos, cut into one-half inch pieces
- watercress
- lemon Wedges
Instructions
Heat oven to broil. Mix the first seven ingredients and reserve. Thread scallops and pimiento on 12-6 inch skewers. Place on broiler pan and brush with butter mix. Broil kabobs three inches from heat, turning once and brushing with butter, five to eight minutes. Garnish with watercress and lemon wedges. Serves 6
