Shrimp Scampi style

Ingredients

  • 1 pound shrimp, peeled and deveined
  • 3 cloves garlic, minced
  • 2 scallions, minced
  • 2 Tbsp olive oil
  • 1/2 tsp lemon juice
  • 1/4 cup chicken broth
  • 2 Tbsp white wine
  • salt to taste

Instructions

Sweat the scallions and the garlic in the olive oil until transparent. Add the rest of the ingredients and cook for 5 or 6 minutes or until the shrimp are done. Serve with arborio rice.
