Cheesy Twice Baked Potatoes
If you love potatoes but are tired of the same old mashed variety, go for a different spud tonight. Make these twice-baked tasty taters with cheese, and you can be assured there won't be any leftovers.
Notes
If you like your potatoes cheesier, increase the amount of cheddar to 3/4 cup, or even more. You may also substitute other types of grated cheese, or combine several for unique flavor.

Ingredients
- 6 medium-sized baking potatoes
- 4 tablespoon milk
- 2 tablespoon margarine
- 1/2 cup cheddar cheese, grated
Instructions
- Preheat oven to 350F degrees.
- Clean and bake potatoes until almost done, approximately 1 hour (longer if potatoes are large).
- Remove from oven and let cool long enough so that you can handle them.
- Cut them in half lengthwise and scoop out the insides and place in a bowl.
- Mash the potatoes with a masher.
- Add the milk and margarine and mash some more to incorporate.
- Add the cheese and mix thoroughly.
- Place the potato mixture back into the skins and bake at 350F degrees for about 30 minutes.
