Ingredients

  • 4 each Corn - grilled and cut off the cob
  • 2 tablespoon mayo
  • 1 teaspoon red pepper flakes
  • 1 each fresh lime (juice and zest)
  • 1/2 cup cojita cheese
  • 1 teaspoon salt
  • 1 teaspoon pepper

Instructions

  1. Preheat oven to 350.

  2. In a small bowl, mix together mayo, cheese, lime juice and zest, red pepper flakes, salt and pepper.

  3. Stir mayo/cheese mixture into corn.

  4. Cook uncovered for 15-20 minutes.

  5. Serve hot.
