Garlic Roasted Brussels Sprouts
"I have been trying to get better at making healthier side dishes that use fresh vegetables, especially now because spring is right around the corner. These brussels sprouts are oven roasted in some olive oil and fresh minced garlic seasoned with a little salt and pepper. These go with any main dish, I decided to make these garlic roasted brussels sprouts to serve with some tofu and pasta for a complete and healthy dinner. What I love about cooking vegetables in the oven, is that I don’t have to watch them on the stove top while they cook. Just mix everything together and let the oven do the cooking while you prepare the rest of the dinner. Roasting the brussels sprouts in the oven makes them crispy and I added fresh garlic to give them a garlic taste to dress them up a little."
