Glorified Irish Mashed Potatoes Colcannon
Glorified Irish Mashed Potatoes made with spinach are a colorful and nutritious side dish for any meal. Making mashed potatoes ahead of time also reduces stress when preparing a large meal with many sides or courses.

Ingredients
- 2 pounds red-skin or golden potatoes, peeled, cut in large chunks
- 1 can whole-leaf spinach, drained
- 1 tablespoon butter or oil
- 1/2 teaspoon onion powder
- 1/3 cup milk, half & half, or cream
- Salt and pepper, to taste
Instructions
- Bring a large pot of lightly salted water to a boil.
- Add potatoes and cook until tender, about 15 minutes; drain and return to the pot.
- Meanwhile purée the spinach. Purée in a food processor until completely smooth.
- Mash potatoes with a potato masher or ricer.
- Mix in puréed spinach and remaining ingredients.
- Warm over medium heat, stirring constantly.
