Raspberry Arugula Salad Recipe

"This simple salad makes for a great side salad to your meal and it’s perfect for so many diets. I love the colors in this salad – in fact, that’s what I was thinking about when I was creating this salad. I wanted all the ingredients to be green except for the raspberries – so I added in green olives, cucumbers, as well as salad greens like arugula and spinach leaves. Then I topped it with whole raspberries so that their color would pop out of the salad."

Ingredients

  • 2 oz (57 g) arugula
  • 1 oz (28 g) baby spinach
  • 1 cucumber, chopped
  • 10-15 parsley or cilantro leaves (remove the stem)
  • 14 pitted olives
  • Salt to taste
  • 1 Tablespoon (15 ml) olive oil
  • 1 Tablespoon (15 ml) lemon juice
  • 14 raspberries
  1. Place all the ingredients into a salad bowl (excluding the raspberries) and toss well. Add salt to taste. Top with raspberries but don’t mix in as they get crushed easily.
