It's the perfect time of the season for some slow cooker soup recipes. This Easy Slow Cooker Mexican Style Turkey Vegetable Soup is a great addition to your slow cooker recipe collection.
Notes
Shredded Monterrey Jack, Quesadilla, or even cheddar cheese is a great complement to the soup.

Ingredients
- 3 cup of turkey bits (can sub chorizo, but if you do, then switch beef for chicken broth)
- 2 can black beans
- 2 can corn (drained)
- 2 can Rotel or similar petite diced tomatoes with chilis
- 1 can chicken broth
- 1 teaspoon black pepper
- 1 teaspoon cilantro
- 1 teaspoon chili powder
- 1 teaspoon paprika
- 1 teaspoon cumin
- 1/4 teaspoon garlic powder
Instructions
- Put ingredients in slow cooker, mix thoroughly and cook for 8 hours.
- If you choose to use chorizo, use 2 fully cooked link size pieces and shred prior to using.
- You can use more, but the "heat" will rise with each addition.
