Mamma's Pasta e Fagioli

Ingredients
- olive oil
- 1 large onion, chopped
- 5 garlic cloves, chopped
- 1 can tomatoes
- 2 can chicken broth
- chopped parsley to taste
- salt and pepper to taste
- 1 cup elbow macaroni, cooked
- 1 can white kidney beans, drained and rinsed
- grated cheese
Instructions
- In a frying pan, heat up the olive oil and saute the onion and garlic until soft and fragrant.
- Chop up or lightly process the tomatoes and place into a slow cooker, along with the broth and sauteed onion and garlic. Add the parsley and a little salt and pepper and cook for about 3 hours on the low setting.
- Add the cooked macaroni and beans. Cook an additional 20 to 30 minutes on low. Serve with a bit of grated cheese if desired.
