Slow Cooker Lentil Soup

This slow cooker lentil soup is great for using up leftover veggies. The best part about this soup is that you just drop it all in a slow cooker and let it heat through. Lentil vegetable soup recipes like this are perfect for weekday meals.

Ingredients

  • 2 cup lentils, presoaked and drained
  • 5 cup water
  • 2 slices bacon, diced
  • 1 onion, chopped
  • 1 carrot, thinly sliced
  • 2 celery stalks, sliced
  • 1 garlic clove, minced
  • 2 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/2 teaspoon oregano, dried
  • 1 can (about 1 pound) tomatoes in juice
  • 2 tablespoon wine vinegar

Instructions

  1. Combine all ingredients in a slow cooker and mix to combine.  Cover and cook on low 8 to 10 hours.
