Easy PB2 Cookies
"These PB2 cookies are so easy to make, and delicious to enjoy. Made with peanut flour, oat flour, eggs, maple syrup and some spices, you can't beat the soft, and delicate finish of these cookies. Peanut butter powder is a dry, dehydrated form of peanuts, created by pressing roasted peanuts to remove most of the oil and then grinding them into a fine powder. Therefore, peanut flour has a lower fat content compared to traditional peanut butter, since the oil has been removed. Plus, peanut butter is a plant-based source of leucine, which is great for building muscle and reducing muscle protein breakdown!"

Ingredients
- 1 cup Oat Flour
- 1 cup Powdered Peanut Butter
- 1 teaspoon Salt
- 1 teaspoon Cinnamon
- 1 teaspoon Baking Soda
- 1 teaspoon Vanilla
- 1 cup Coconut Oil, Softened
- 2 Eggs
- 1 cup Maple Syrup (Use Up To 1/2 Cup For A Sweeter Cookie)

Preheat oven to 350 degrees.

Mix dry ingredients (oat flour through baking soda). Mix wet ingredients in a separate bowl, and add to dry ingredients.

Using a cookie scooper, form into small cookie shape and put on parchment paper or silpat mat.

Flatten as needed.

Bake for 8-10 minutes.
