"I love to read, it really doesn’t matter what it is I’ll read just about anything but I really enjoy reading cookbooks. Old ones new ones, I just think it’s so interesting to find different recipes to try. The other day I was reading through Valerie Bertinelli’s book Valerie’s Home Cooking: More than 100 Delicious Recipes to Share with Friends and Family and I saw this recipe for S’mores Popcorn. I mean who doesn’t love Valerie and S’mores and Popcorn so this has to be amazing, right? S’mores Popcorn doesn’t disappoint, it’s crunchy, chewy, chocolatey and totally addictive – time for an extra Pilates class but I don’t care, it’s that good! In the book she talks about how it started out in the test kitchen with her trying to come up with a peanut butter and jelly popcorn and when that wasn’t working for her she decided to try S’mores Popcorn. I’m not sure what I think of the idea of peanut butter and jelly popcorn but I could eat S’mores Popcorn all day long so I’m really happy she tried it and shared it in her cookbook. This recipe would go really good at a party, a family gathering, movie night or like me sitting at my desk and munching on it while I write this post. My favorite line in the intro for this recipe is “And yes, this does save in an airtight container, but good luck with that.” True story, if you make S’mores Popcorn it doesn’t last very long!"

Ingredients

  • 10 cup popped salted popcorn
  • 1 cup miniature marshmallows
  • 1 cup lightly crushed graham crackers (about 5 rectangles)
  • 3 cup semisweet chocolate chips
  • 3 cup granulated sugar
  • 1 cup unsalted butter
  • 1 cup packed light brown sugar
  • 1 cup light corn syrup
  • 1 teaspoon kosher salt
  • 1 teaspoon baking soda
