Allie's Gumbo
Don't know what to cook for dinner tonight? Allie's Gumbo is a simple and easy chicken gumbo recipe made with black beans, corn and meatballs to give it a truly unique taste.
Ingredients
- 1 pkg (3 legs/3 thighs) chicken - cooked, skinned, deboned, chopped, save chicken stock
- 1 pound ground sausage or bacon - made into small meatballs and cooked
- 2 (14.5-ounce) cans chicken broth
- 1/2 large green pepper,chopped
- 1/2 large yellow onion, chopped
- 1/2 large red pepper, chopped
- 1/2 bag frozen corn
- 2 cup instant brown rice
- 1 (16-ounce) can pinto beans
- 1 can (19-ounce) can black beans, drained
- 1 14.5-ounce) can chopped tomatoes with green chilies
- 2 packets brown gravy mix
- salt, pepper and cajun seasoning, to taste
Instructions
- Set the meat aside.
- In large stock pot, add 2 - 3 cups of water.
- Add saved chicken stock (above) approx 1 - 2 cups & chicken broth.
- Add green pepper, red pepper, yellow onion and frozen corn.
- Bring to a boil and let veggies cook for a bit to soften.
- Add brown rice, pinto beans, black beans, chopped tomatoes with green chilies.
- Add in chopped/cooked meat from above.
- Take some of the hot liquid from the pot and dissolve the packets of brown gravy mix. Add to gumbo.
- Add seasonings to your taste.
