- 1 pound ground turkey
- 1 tablespoon olive oil
- 1 package taco seasoning, low sodium preferred
- 1/2 package ranch seasoning
- 1 tablespoon oregano
- Salt and pepper
- 1 red pepper, diced
- 1/2 white onion, diced
- 1 can diced green chilis
- 1 can kidney beans, drained and rinsed
- 1 can black beans, drained and rinsed
- 1 can Ro-Tel tomatoes and green chilis
- 1 cup frozen corn
- 2 cup chicken broth, low sodium preferred
- Shredded cheese, for serving
- 8 ounce Velveeta cheese
- Tortilla chips, for serving
- Sour cream, for serving

Follow these easy instructions to make this Mexican-style soup recipe.

Heat olive oil over medium-high heat. Add ground turkey and begin to brown. Add seasonings while browning the meat.
