Famous 15 Minute Italian Soup
This Olive Garden-inspired soup recipe is quick and delicious!
Famous 15 Minute Italian Soup is our version of the delicious Zuppa Toscana soup you may be familiar with if you've ever ordered it off the Olive Garden menu. This copycat version is just as tasty and you can make it at home anytime you want! With crispy bacon, spicy Italian sausage, onions, potatoes, chicken broth, spinach, and a few others ingredients, this soup packs a hearty punch. It's also one of the yummiest soups we've ever made in our test kitchen. If you love having great soup recipes at your disposal all year long, this is one you'll want to add to your menu.
Ingredients
- 6 slice bacon, diced
- 1 pound bulk spicy Italian sausage
- 1 tablespoon olive oil
- 2 clove garlic, minced
- 1 onion, diced
- 4 cup chicken broth
- 4 yukon gold potatoes, thinly sliced
- 3 cup baby spinach
- 1 1/2 cup heavy cream
- Kosher salt and freshly ground black pepper, to taste

Heat a large pot over medium-high heat. Add bacon and cook until crispy, about 6-8 minutes. Transfer to a paper towel-lined plate; set aside.

Add Italian sausage to the pot and cook until browned, about 3-5 minutes, making sure to crumble the sausage as it cooks. Add garlic and onion, and cook, stirring frequently, until onions have become translucent, about 2-3 minutes.

Stir in chicken broth and add potatoes. Bring to a boil and cook until tender, about 10 minutes.

Stir in heavy cream and spinach. Season with salt and pepper.

Serve immediately. Sprinkle each bowl with reserved bacon crumbles.
