Hearty Black Bean Soup

Warm up from the cold with this Hearty Black Bean Soup. Full of onions, carrots, potatoes, and turkey kielbasa, this easy black bean soup will heat up bellies in no time!

Ingredients
- 1 tablespoon olive oil
- 1 cup onion, chopped
- 2 garlic cloves, minced
- 2 carrots, thinly sliced
- 2 can (15-ounce) black beans, rinsed and drained
- 2 cup water
- 2 chicken bouillon cubes
- 1 cup potato, peeled and diced
- 1/2 teaspoon thyme
- 1/2 teaspoon cumin
- 1 can diced tomatoes, undrained
- 7 ounce turkey kielbasa, diced
Instructions
- Sauté onion, garlic cloves, and carrots in 1 tablespoon of olive oil until tender.
- Add water, beans, potato, thyme, cumin, and bouillon. Return to a boil.
- Add kielbasa. Reduce heat, cover and simmer 20-25 minutes or until potatoes are tender.
- Stir in tomatoes and heat through.
