- 6 slice bacon, chopped
- 1 1/2 pound (750 g) Beef Stew Meat (cut into 1/2-inch pieces)
- 4 clove garlic, chopped
- 1 white onion, chopped
- 2 tablespoon (25 mL) chili powder
- 1 tablespoon (5 mL) ground cumin
- 1/2 teaspoon (2 mL) salt
- 1/4 teaspoon (1 mL) freshly ground black pepper
- 2 baking potatoes, peeled and diced
- 2 can (each 14 to 19 oz/398 to 540 mL) pinto beans, drained and rinsed
- 2 can (14 oz/398 mL) diced tomatoes, drained
- 1 can (4 oz) green chiles, diced mild
- 4 cup (1 L) beef stock
- 1 cup frozen corn kernels
- Croutons for topping

In a large pot, sauté bacon over medium heat until starting to brown. Add beef chunks and sauté, breaking up until no longer pink, about 5 minutes.

Add garlic, onion, chili powder, cumin, salt and pepper; sauté until onion starts to soften, about 3 minutes.

Add potatoes, beans, tomatoes, green chilies, and stock; bring to a boil. Reduce heat and simmer until potatoes are just tender, about 20 minutes.

Add corn and simmer for 10 minutes.

Garnish with croutons and enjoy!
