Ingredients
- 1 whole boneless chicken breast, skin-on
- 1 onion, chopped
- 1/4 pound fresh peas
- 2 carrots, sliced
- 3 stalks celery, sliced
- 1 bunch green onion, chopped

Instructions

Put chicken into a big pot with water to cover, add chopped onion and a few peppercorns. Bring to boil and simmer gently for 20 minutes.

As you prepare vegetables, put all clean vegetable discards (celery tops, pea pods, carrot scrapings) into simmering broth. After 20 minutes, remove chicken and strain broth. Reduce broth if necessary.

Return broth to simmer, add peas and carrots, simmer 5 minutes.

Add celery, simmer 5 minutes.

Add cut up chicken and green onions.
- Stir in noodles and simmer until noodles are barely tender.
