Avocado Soup

Ingredients

  • 4 medium avocados
  • 1 cup plain low-fat yogurt
  • 4 cup chicken stock or broth, cold, fat removed
  • Juice of 1 lime
  • 1 teaspoon finely chopped fresh mint
  • Red pepper sauce, to taste Salt, white pepper, to taste Avocado slices,
  • fried tortilla strips for garnish

Instructions

Yield: 6 servings. Cut the avocados in half and remove the pits. Roughly chop the flesh. Transfer to the bowl of a food processor. Add the remaining ingredients, except avocado slices and fried tortilla strips. Process until smooth. Adjust the seasoning. Serve garnished with avocado slices and tortilla strips.
