    Asparagus Cream Soup

    Ingredients

    • 6 cups of beef bouillon
    • 1 medium onion, chopped fine
    • 1 cup of oatmeal
    • 1 pound asparagus, tips removed ( other vegetables can be used )
    • optional - handful of rice or barley (already cooked)
    • Salt and pepper to taste

    Instructions

    Saute onions in butter or oil until soft. Add all other ingredients except asparagus tips and rice or barley. Bring to a boil over medium heat and simmer for 30 minutes, then place in blender to puree. Return to pot and add other ingredients and simmer for 5-10 minutes, until tips are soft. Do not over cook or tips will disintegrate.
